Colombia’s principal river, the Magdalena, almost splits the country in two, flowing from Huila in the south of the country all the way to the Caribbean Sea 1500km to the north. Elcias’ farm is near the river’s base and its many tributaries provide minerals and hydration to his coffee trees. Elcias’ farm is in El Vergel, a small municipality in central Huila with only one hundred residents. His farm sits at a very high altitude for a Huilan coffee, which shows in it’s crisp acidity and complex berry-like aromatics.
