What's involved in producing great coffee? Is it nature or nurture? Old Bourbon and Pacas varietals grow in some of the richest deposits of limestone in the country on Maria Olimpia's farm in El Cedral, Santa Barbara.

Maria wiped her hands of pesticides and synthetic fertilisers years ago. Now fungi, healthy ground cover and a diversity of birds and insects are more abundant than ever before.

From the soil to sorting, Maria leaves nothing to chance. We couldn't be more happy to be working with her for the third year in a row.


Suitable for espresso and filter brewing. Best served black. Enjoy within four weeks of roast date.
